Ingredients:
- 6 walleye filets, boneless and skinless
- 4 tbsp. of butter
- 1 tbsp. of flour
- 2 tsp. olive oil
- 3 tsp. chopped fresh, flat-leaf parsley
- 1 cup warm whole milk
- Juice of half a lemon
- Salt and pepper to taste.
- (Optional) Lemon slice and/or cherry tomatoes for garnish
Sauce Directions:
- Melt butter in a heavy-bottomed saucepan over medium heat.
- Whisk in flour, cook for 2-3 minutes, stirring frequently.
- Slowly add warm milk in a steady stream, whisking constantly. Mixture should slowly bubble and thicken. DO NOT BOIL.
- After the sauce has thickened to your liking, whisk in lemon juice, salt, and pepper.
- Keep warm, adding the chopped parsley when ready to serve.
Fish Directions:
- Rinse filets under cold water. Double check for bones and remove any you find.
- Pat dry filets with paper towels, then sprinkle with salt and pepper.
- Heat olive oil in a nonstick skillet over medium to medium-high heat.
- Add fish, cooking both sides until slightly golden and flakey. This should take about 5-10 minutes.
- Carefully remove fish from skillet, preferably with fish spatula
- Drizzle sauce on top and serve extra sauce on the side.
- (Optional) Lightly sear lemon slice for garnish. For cherry tomatoes, simply slice in half and add to plate.
